My new strategy is to spend some time on Sunday night cutting and slicing those fruits and veggies that look so daunting later in the week when life gets crazy. I pack one of my produce drawers with snack bags of pre-cut and washed carrots, cucumbers, grapes, apples, blueberries, watermelon, etc. Now there is no excuse!

My favorite quick lunch is always leftovers from the previous nights dinner! Although, yes, you have to have MADE dinner the night before, if you take the time the night before to have a healthy meal then it can serve as double duty for lunch the next day!
